Default Sweet potato and red pepper pasta.

This recipe sounds good except for the tarragon. Any suggestions for a different herb that might work. Also I think no tomatoes and more roasted red peppers would be good. Should I just try this as is first to see? I'm thinking a good squash would work as well.

3 cups of shredded sweet potatoes would need two medium sweet potatoes, not just one as stated in the recipe.

Duh, right at the top it mentions chives, and I grow plenty of chives.There are plenty of new chives just a few inches long that could be sniped. That would do it with a bit of flat leaf parsley.
