Default Vanilla Beans

I bought what I thought to be fresh vanilla beans.
Eager to give it a try, I scraped some of the paste like substance from one of the pods...
It didn't taste anything like the liquid form we are all so familiar with and it was GRITTY!

Is that how fresh vanilla is suppose to be? Like a billion teeny tiny paste like seeds?

I asked about how to store them and was told to keep it in a plastic bag so they wouldn't dry out. She further stated, that if it was stored for a length of time they may develop crystals upon them which meant they were high in vanillin and are of very good quality then went on to say that they were still good to use.

After I got home which was about two weeks after I had bought it, I did a little search on the computer for recipes on how to make my own extract. It was quite simple really..Something like soaking them in alcohol for so long and such BUT......

When I retrieved the bag to try out this wonderful fresh vanilla, I noticed a yellowish bloom upon them. I gave it a sniff and found it to be, not a pleasant like scent.

I don't think this is what they had meant as far as a crystalline coating.
I suspect it to be mold.

I have never used fresh vanilla beans, but I would have the same worries you have. I would suspect mold too.

Like biigblue, I've never used anything except for the (real) vanilla extract...and I too suspect mold.

Now, as for the gritty seeds, I'm guessing that is normal--have you ever eaten Breyer's All Natural Vanilla ice cream? It has those tiny black specks in it. Yum! It has been a while, but I've always liked it.

Now that you mention it..It DOES have those little specks in it!
I guess I was expecting it to be so much more pure and pleasurable tasting than the extract is so to have that many little pods floating upon the taste-buds like that was sure a surprise. I ended up throwing out the stuff once I had discovered what I thought to be mold. Too bad because it cost a little bundle.
