I am not a good cook. All these suggestions have been so helpful. Thank you everyone. I do have a deer steak havalotta. The last one I fried with onions. It was delicious. I think I did cook it too long though. Fry it in oil and add butter? I'll have to skip the butter since the cardiologist just told me to increase my blood pressure medication!

yes I know what across the grain is. That is a good reminder though because I forgot that tip.

I was so discouraged when I cooked that roast. Now I have lots of good tips for the next one. I love this forum!
